He began operations in Manhattan in 1998, when he opened a reputed restaurant along with New York restaurateur Danny Meyer. He was widely praised for this restaurant by New York Times food critic Ruth Reichel, who wrote that, "I've always been waiting for such food, American food that is well-seasoned with an amazing variety of Indian spices and flavors."

Later on, Cardose became a global figure in the field of cooking and was highly regarded and admired by chefs and cookers throughout the world. At the time, he told CBS that, "I wanted to be a biochemist but turned to the restaurant business."
