Mr. President of the Republic, the restaurant sector, which yesterday guaranteed more than a million jobs, is today at a standstill. Many of us may not be able to get up if the cessation of activity continues. Despite this, many restaurants and producers, committed custodians of our artisanal culinary heritage, despite their great economic distress, volunteered to support the hospital staff who save lives every day.

The Culinary College of France has been working for a month to build a new economic model for restaurants, a model that draws all the lessons from this brutal and unprecedented test. It is a question of laying the foundations of an even more civic, even more committed restoration, with high health value, good for our health and that of the planet.
We are waiting, Mr. President of the Republic, for a decree of “partial deconfinement” to be promulgated as soon as possible
