The Tölzer-Land bakers and solidarity community Oberland present their seasonal bread.
The recipe is more than extraordinary.
The dough itself only plays a supporting role.
Geretsried – Since Tuesday, the Detter, Eberl, Lugauer, Schmid-Bäck' and Speckerbäck bakeries have been pampering their customers with a delicacy: the “Gemüseretter” seasonal bread they offer consists purely of regional ingredients – with no artificial additives or flavorings.

Before the bread was tapped in the Schmid-Bäck' headquarters on Schlesische Straße, the chairwoman of the Oberland solidarity community, Adriane Schua, put a few carrots, celery, potatoes and leeks on the table.
"We want to recycle these saved crooked organic vegetables in a meaningful way instead of throwing them away," she explained.
Five artisan bakers used these ingredients to finely dice them and mix them with sourdough to bake what is now the eighth season bread.
The basis for this is provided by “Unser Land” flour, water and yeast.
The grain grows on regional fields.
"Especially in these difficult times, it is important to maintain these sustainable structures," emphasized Schua.
High raw material and energy prices: Compensated with the idea of solidarity
The Tölz artisan baker Michael Detter sees it the same way.
"We strengthen the economic cycles in the region and can feed ourselves." Ludwig Schmid and Anton Lugauer referred to the rising raw material and energy costs, which can be compensated thanks to the existing solidarity concept.
"We have to pass the raw material price increases on to the customer, otherwise the lights will go out for us next year," Lugauer regrets.
Ludwig Schmid was relieved that he had already concluded a long-term contract with a regional energy supplier before the outbreak of the Russian war of aggression in Ukraine and can still rely on fixed prices.

Geretsried: Same recipe - different taste
The heart of the "Gemüsesetters" is the natural sourdough prepared with rye flour.
Although all the bakers involved had the same recipe, each individual bread tasted different.
"That's just the opposite of the bakery in the discounter, where the aroma always stays the same," emphasized Schua.
Maybe that's also because the traditional bakers take more time for the dough and are constantly developing new variants.

"I think we'll never run out of ideas," said Schmid confidently.
The "Gemüseretter" is available in September and October in all branches of the Schmid-Bäck', Detter, Lugauer, Eberl and Speckerbäck bakeries.
