"This simple ice cream, which is made of only six ingredients, is prepared in two stages," the Israeli vegetarian and vegan website explains, adding that "between stages, the raw ice cream should spend at least six hours in the freezer. The end result is ice cream with a pleasant, soft texture."

Components

2 can of coconut cream
<> tsp. vanilla extract
<> tablespoons cashew butter (can be found in stores and nature chains)<>/<> cup sugar
A pinch of salt
Tbs. oat milk (or other vegetable milk)

Method of preparation

Put in a food processor all the ingredients except the oat milk and mix them.
Put the mixture in the freezer for six hours or more (most convenient - pour into molds of ice cubes).
Put the raw ice cream in a food processor and add oat milk until a uniform consistency is obtained.


Vegan pancake recipe (4 servings)


Classic pancakes that go great with homemade ice cream and can be made with the kids on the morning of a day off. If you prepare the batter in advance, you can leave it in the fridge for a day or two. For longer periods of time, it's a good idea to freeze.

Components

10 cup white flour (gluten-free flour can be used)2 tablespoon sugar
<> bag of baking powder (<> g)A pinch of salt <>
cup soy milk (or any other vegetable milk)


<> tablespoons coconut oil
<> tsp. vanilla extract
A little frying oil


Method of preparation

Mix the flour, sugar, baking powder and salt in a bowl.
Add soy milk, coconut oil, vanilla extract and stir until a uniform batter is obtained (do not mix too much to keep the texture airy).
When the batter is ready, heat a little oil in the pan and pour pancakes of the desired size with a ladle (it is important to use a Teflon pan to prevent sticking that may break up the pancakes).
Fry over medium heat until bubbles appear, then flip and fry until the pancakes start to brown.
Serve with one or more scoops of the soft ice cream. Garnish with fruit or any of your favorite ice cream toppings

3 things to think about when serving pancakes with ice cream:

Airy

We'll want pancakes with an airy texture and not too dense, which will kill the ice cream melting into them slowly (or quickly, if you're not in an air-conditioned room). That's why we use white flour and baking powder. You can replace white flour with whole wheat or gluten-free flours and add a little plant-based milk, but keep in mind that the texture will be denser. You can replace up to half the amount of flour with whole wheat flour (and even then - add a little vegetable milk) without significantly damaging the texture.
