Revital Admoni, a nutrition education teacher, is offering healthy cooking classes in distance learning to first through sixth graders who have not yet returned to full routine. The lessons are part of a curriculum called "The Way of the Senses", which emphasizes the importance of a healthy diet and develops awareness among students. We asked her to share with us her special recipe for brownie cookies that combine dates and nut butter.
Recipe for brownie cookies without baking
Components
- 120 grams pitted dates (about 5-6 Majhol dates)
- 6 tablespoons milk (cow, almonds, soy)
- 2 tablespoons nut butter (almond butter, peanut butter)
- 30 g cocoa powder (<>/<> cup sharp)
- 50g dark chocolate crackles
- 6 Mangates / Cupcakes (optional)

Method of preparation
1. Soak the dates in boiling water for half an hour, pour the water, grind in a blender with 3 tablespoons of milk.
2. Add the resulting date puree to a bowl with the cocoa, nut butter and mix well until uniform.
3. Divide into balls according to the desired size and create a dimple in the center of each ball.
4. Melt the chocolate and 3 tablespoons of milk in a double-boiler.
5. Pour the melted chocolate into the dimples. You can also sprinkle a pinch of coarse salt on top.
6. Place in the freezer for half an hour.
7. Refrigerate for one hour before serving.
