Persimmon, native to China, is a winter fruit. Its main use is fresh fruit, but it is also suitable for baking, pickling, drying and more. Our company, which grows persimmons, believes in exploiting what the earth brings to it. As a children's snack, she slices thin-thin persimmon, dries in the oven and serves a snack – persimmon crispy.

The persimmon is not a native species. The first trees were brought to Israel at the beginning of the last century. Until after the establishment of the state, the fruit was found in only a few observation plots. Successful development of agricultural methods created the possibility of cultivation, especially of the "Triumph" variety. Today, persimmon groves cover tens of thousands of dunams and exports reach tens of thousands of tons a year. Israeli persimmon is very sweet, with a high amount of sugar, which gives it an advantage over persimmons from other countries.
The tree itself is also interesting: after an impressive dense bloom in winter, all the leaves fall off, leaving the tree completely naked, except for the fruit that remains hanging from the branches.
Wings with persimmon salsa,
Chicken wings with persimmon salsa
Ingredients:
√ 2 kg wings (calves are also possible)
Salsa ingredients:
√ 1 red onion cut into small cubes√ 2 persimmons cut into small
cubes√ 1 finely
chopped red chili pepper√ grated peel from 3 lemon√ 4 tablespoons honey
√ 1 tablespoons soy√

√ 6 chopped garlic cloves√ chopped bouquet of coriander√ 4 tablespoons olive

How to prepare:
1. Cook the wings in a saucepan with boiling water for half an hour. Drain, cool and transfer to mold.
2. Mix all the salsa ingredients in a bowl.
3. Brush the wings with sauce and place in the oven for 25 minutes at 220°C.
4. When the wings are ready, sprinkle the remaining salsa over and serve.
