Grandma's traditional potato dressing is the perfect companion for lamb's lettuce.

  • 2 floury potatoes

  • 1 onion

  • 300 ml broth

  • 3 tablespoons vinegar (e.g. white wine vinegar)

  • 1 tsp mustard

  • 3 tbsp neutral cooking oil

  • salt and pepper

The preparation is simple and quick:

  • Wash, peel and cut potatoes into cubes.

    Peel and dice the onion as well.

  • Put the potatoes and onions together with the broth in a small pot and simmer, covered, on a low heat for about 15 minutes until the vegetables are cooked.

    Puree everything together with the hand blender and let cool.

  • Add vinegar, mustard, oil and mix well.

    If the potato dressing is too thick, add a little more water, broth or even milk.

    Finally, season generously with salt and pepper.

  • Mix the cleaned lamb's lettuce with the dressing and serve immediately.

  • A potato dressing is the perfect way to use leftover boiled potatoes.
