3 large eggs
300 g sweetened condensed milk
120g flour
1.5 teaspoons of baking powder
1 organic lemon
Lemon icing:
120g powdered sugar
2 tbsp lemon icing
The preparation is not only easy, but also quick:
Preheat the oven to 160 °C fan oven.
Grease a loaf pan and dust it with flour.
For the lemon cake:
Mix the eggs and the sweetened condensed milk in a large bowl using a hand mixer or food processor until frothy.
Mix the flour with the baking powder, sift and stir into the egg-condensed milk mixture.
Wash the lemon with hot water, rub dry, grate the peel and squeeze out the juice.
Set aside two tablespoons of lemon juice for the icing.
Stir the remaining juice and lemon zest into the dough.
Pour the dough into the prepared pan and bake in the preheated oven for 35 to 45 minutes.
Remove the cake from the oven and let it cool completely.
Then carefully turn it out of the mold.
For the icing:
Mix the powdered sugar with the lemon juice until a thick mixture forms.
Spread the cake with the icing and serve.

To test whether the cake is ready, you can test it with a stick.
Simply pierce the center of the cake with a wooden stick.
When no more dough sticks to it, it is finished baking.
