Cream cheese filling:

  • 250 g cream cheese

  • 50g powdered sugar

  • 0.5 tsp vanilla extract

What flavor does Red Velvet have?

If you think that the red color in the well-known Red Velvet Cake, on which the cookies are loosely based, indicates a berry or fruity taste, you are wrong.

The original American recipe does not contain any fruit, but rather beetroot.

Among other things, this creates the reddish color, which is intensified by a chemical reaction between cocoa powder and buttermilk.

The taste of Red Velvet is reminiscent of a combination of bitter cocoa and sweet vanilla.

Preparation is easy thanks to these step-by-step instructions:

  • For the cream cheese filling:

Mix together the cream cheese, powdered sugar and vanilla extract.

Roll a tablespoon of the cream into balls, place them on a baking tray lined with baking paper and let them solidify in the freezer for at least an hour.

  • For the cookie dough:

Beat the butter together with brown sugar, 150 grams of sugar and salt in a food processor for five minutes until white.

Stir in egg and food coloring.

Mix the flour, baking powder and cocoa, sift and fold into the butter-egg mix with a wooden spoon in just a few hand strokes.

The dough should no longer stick.

  • Preheat oven to 175 °C fan oven.

Line a baking tray with baking paper.

  • Form one to two tablespoons of dough into a ball per cookie and then flatten it.

Place a frozen cream cheese ball in the middle and seal the dough tightly.

Form the dough into a ball again.

Do the same with the remaining dough and chill for another 30 minutes.

  • Place dough balls spaced apart on the prepared baking sheet and bake until lightly browned, about 15 minutes.

  • Let the cookies cool on a wire rack and enjoy!
