A cool breeze blows in the early afternoon, the light softens and turns golden and the sun disappears early.

Days between fall and winter are days that have magic.

The colors are sharpened and the air is fresh.

At this rapid seam between light and utter darkness, in the evening and between the two parts of the day, I dedicate to myself a few minutes of silence.

Contemplate, renew energies, plan your upcoming dinner - and quiet again.

Without thinking and without thinking.

And if quiet, then let it be a peaceful time accompanied by hot tea and sweet cookies.

Crispy cookies, soft, sticky, crispy, chocolatey, buttery cookies - the main thing is cookies.

So delicious to soak in the warm and aromatic liquid.

Chocolate fudge cookies are the undisputed stars of my homemade cookie box, but recently added soft and wonderful milk jam cookies, and the big discovery of the season is without a doubt the exemplary combination of crispy dough and streusel dough.

Chocolate and honey fudge cookies

Ingredients (for about 14 servings):

√ 350 grams of coarsely chopped dark chocolate

√ 2 heaping tablespoons soft butter

√ 2 eggs

√ A pinch of salt

√ 1/4 cup compressed brown sugar

√ 3 tablespoons honey

√ 1 teaspoon vanilla powder or vanilla puree or fine vanilla extract

√ 2 tablespoons cornflour

√ 2 tablespoons high quality cocoa powder

√ 1/2 cup ground almonds

1/4 teaspoon baking powder

Preparation:

Melt 200 grams of chocolate and butter into a completely smooth cream

2. Beat eggs, salt, brown sugar and honey to a light and apple foam, add vanilla.

Mix cornflour, cocoa, almonds and baking powder.

4. Fold the chocolate mixture into the egg mixture, fold the dried ones into the chocolate, add the rest of the chopped chocolate (150 g).

Arrange on a baking sheet uniform mounds at intervals.

Bake in the oven at medium heat, 180 degrees, for about 8 minutes until the surface of the cookies becomes cracked and shiny.

7. Release the cookies from the mold only after they have cooled.

Milk jam cookies

Ingredients (for about 30 servings):

For cookies:



√ 1 and 1/3 cups flour



√ 1/2 teaspoon baking soda



√ a pinch of salt



√ 125 g soft butter at room temperature

√ 6 tablespoons (200 g) milk jam



√ 6 tablespoons brown sugar



√ 1/4 cup white sugar



√ 1 egg 



√ Coconut for sowing

Preparation:

1. In a mixer bowl with a guitar hook mix the butter well.

Add the milk jam and mix together.

Add the two types of sugar and continue to mix until a uniform mass is obtained.

2. Add egg and stir until it is absorbed into the mixture.

   Add the flour, baking soda and a pinch of salt, and mix just until the flour is absorbed into the dough.

With clean and slightly wet hands form circles out of the dough and place them on a baking sheet lined with baking paper, at a distance from each other.

This way, the cookies will have room to expand while baking.

4. Slightly flatten the cookies with your fingers and sprinkle coconut on top.

Bake in the oven over medium heat, 180 degrees, for about 10 minutes.

The cookies remain soft and harden slightly when cooled.

Crispy dough cookies with streusel

Materials:

For crispy dough:



√ 2 cups flour 



√ 175 grams cold butter cut into cubes



√ 120 grams powdered sugar



√ 1/3 vanilla stick



√ 1 egg yolk



√ 2 tablespoons cold water 

For the streusel:



√ 100 grams of cold butter, cut into cubes



√ 1/2 cup sugar



√ 3/4 cup measuring flour



√ 1/2 tablespoon baking powder



√ 2/3 measuring cup A mixture of almonds and ground nuts to taste (almonds, walnuts, Pecan)

Preparation:

For the crunchy dough:

Mix the dry ingredients with the butter until crumbs are obtained.

Add the yolk and water, mix a little until a dough is obtained, wrap in plastic wrap and refrigerate for about half an hour.

Meanwhile, prepare a streusel: In a food processor, process all the dough ingredients in pulses to obtain uniform dough crumbs.

Roll out the crunchy dough to a thickness of ½ cm and roll into the desired shape, arrange in a baking pan lined with baking paper.

Sprinkle a generous amount of streusel over each cookie.

Bake in a preheated oven over medium heat, 180 degrees, for about 8 minutes (depending on the size of the cookie) until golden.
