On the eve of the new civil year, perhaps the significant year since the establishment of the state in everything related to the restaurant and culinary industry here in Israel, it is time to summarize all the events, both good and unfortunate, the new trends and everything you may have missed.

First article in the series.

A

Tnuva box -

when you think about it, this is a great patent - both a chair and a table.

The green Tnuva box has become the property of restaurant owners who "take advantage" of the crowd's approval, so in recent months we have witnessed a variety of public areas around the country, especially in Tel Aviv, filled with the above accessory both as a chair and a table. They even encouraged the yeshiva and scattered more crates on their own initiative.

Pineapple -

Is pineapple the best friend of meat or is it a trend mouse that all famous chefs hate?

The long debate has been going on for many months when on the one hand there are those chefs who do "meat shows", combine the exotic fruit (as in the video above) and get enthusiastic. On the other hand there are more senior chefs who underestimate the phenomenon and it has become common. in doubt.

Instagram -

This is not exactly a 2020 trend, but this year has accelerated the transition of most of the scene to the aforementioned social network, which has grown many stars in a variety of categories, invented new concepts and provided a livelihood for many people who have always dreamed of being culinary stars.

B

Water borax -

or by its other name, Sue Boric.

Turkish pastry, cooked in water with layers of produced dough, is very similar to lasagna and stuffed with layers of cheese or cheese and spinach, has become a hit in recent times, also in deliveries but especially in periods when we are familiar with walking around the markets.

It could be that the fact that it is not fried attracts many more people who both eat borax and also manage to clear themselves conscientiously.

We are in favor.

third

Cornflakes Ice Cream - The

State of Israel has become no less than an ice cream powerhouse in recent years.

The ice cream category is one of the most popular in the delivery apps and Kilo Anita is the most common gift on birthdays.

Beyond all this, they have established ice cream based on special trends and toppings of various kinds, the most prominent of which is the "Lulu & Co" cornflakes bar that opened on Rothschild Boulevard and later, because of the corona, began selling cornflakes flavored ice cream in delivery - a concept that at least now proves itself.

Home Growing - The

days of closures and multiple stays at home caused many to upgrade their hobbies, some began to bake, some fulfilled the dream of the home garden and began to grow around the house and on the windowsill a variety of vegetables for private use.

Many nurseries have started making deliveries and have actually made the process easier and overall it is a very fun experience even if not worth it in the long run.

D

Daniel Amit -

we have already written above that everything that happens in the food scene - happens on Instagram.

Daniel Fellow is more or less the spearhead of this phenomenon.

She did not break out this year, that's true, but it was definitely her year.

Her hundreds of thousands of loyal followers eat everything she eats, mimicking her habits and even adoring her family, friends and girlfriends.

Waiting anxiously to see what she has in store for us for 2021.

God

Hamburger -

Also in 2019, the days of innocence, the hamburger ruled unchallenged in the field of deliveries, but the constraints of the Corona caused many restaurants that wanted to "stay in competition" to upgrade the product, and we are the biggest gainers from all this.

More and more delicious burgers, more and less successful innovative toppings, and not at all sure there is a limit to this thing.

Vocational retraining -

Corona has left people at home, and when people stay home they are thinking of new directions, so we have heard many stories of people being fired or inspired that made them leave everything and turn to the home food business.

From famous singers like Aviva Avidan to a variety of hitchhikers who were fired and started baking and cooking in their home kitchen.

and

Walt - This was the year of Walt, who along with many complaints from restaurateurs gained new customers, left Tel Aviv and developed into many cities, when as of this writing it is also about her arrival in more distant cities such as Jerusalem and Beer Sheva.

We diners seem to have developed a bit of a dependence on it and competitors during the Corona period, but it is not that we had too many choices yes?

P

Zoom -

Did you think cooking in front of cooking shows is annoying?

Try doing it on an annoying internet broadcast that will hang and hang up after 40 minutes.

On the other hand, it opened up new content for us that was not necessarily within reach, and whether we like it or not, it is pretty much the only workshop that can be held these days.

H

Challah -

There are quite a few reasons why challah is one of the most prominent trends of 2020. It is delicious, suitable for everything, relatively easy to prepare and it is a pretty fun activity that is even beautifully photographed.

Second, lots of places have moved to deli and started selling a variety of types of dips - what will they be wiped with?

On top of that, men and women like Daniel Kitsis, who has rightly become a challah empire, cause tens and hundreds of people to stand in line for a long time every week and it seems that the demand for the aforementioned carbohydrate will never end.

Farmers -

Remember we used to buy vegetables from the supermarket or the neighborhood greengrocer?

Suddenly the corona arrived and we found ourselves traveling on Saturdays to farms, befriending the farmer who picked our own vegetables and returning home with a crate full of goodies in addition to a variety of exotic vegetables and fruits that until recently we did not even know existed.

ninth

Veganism -

Another old trend that the corona did well for.

Quite a few new vegan ventures have burst into our lives in the past year, alongside new, home-made vegan kitchens.

The field, which is still considered very developed in Israel, is expected to continue to grow in 2021, regardless of the virus.

The

Winery -

Wineries were popular before, but under the auspices of the virus and the intensification of picnics, the wineries woke up on time, offered picnic baskets full of wine and a variety of dishes alongside dreamy locations and benefited greatly,

about

Cabbage -

It seems that in the last year, amateur chefs and cooks have fallen in love with the raw material, which is also defined as superfood.

Truth be told, why not?

It is delicious, quite healthy and in most cases its recipes are also quite simple, unless you are starting to get entangled with stuffing.

To

For rent -

the saddest trend we have written about.

The amount of "for rent" signs in places where many restaurants were located, anonymous alongside famous, is unprecedented.

Many restaurateurs were unable to stabilize the business in the first closure and found themselves closed from March, others managed to survive a bit with a slight transition to deliveries and now, almost a year later, very few restaurants have closed and quite a few are expected to close soon.
