Ingredients (for 10 muffins 5 cm in diameter):
3/4 1 cups flour (240 g)
1/2 cup brown sugar (120 g)
Teaspoon salt (5 g)
Baking powder bag (10 g)
1/4 cup orange juice (60 g)
1/3 cup water (80 g)
2 eggs size L
1/2 cup oil (100 g)
A cup of crushed ripe bananas
1/2 teaspoon cinnamon
1/4 teaspoon cardamom
1/4 teaspoon ground ginger
1/2 cup raisins (80 g)
1/4 cup brandy (50 g)
Banana slices 1/2 cm thick for decoration
preparation method:
Soak the raisins in the brandy, and preheat the oven to 175 degrees.
Mix the brown sugar in a bowl to ventilate it and crumble lumps.
Add to it all the dry ingredients: the sifted flour, the baking powder, the salt, the ground cinnamon, the cardamom and the ground ginger.
In another bowl, mix all the liquid ingredients: orange juice, water, oil, eggs and bananas.
Combine the dry ingredients with the liquid, add the raisins and brandy and mix until the batter is uniform.
Pour into muffin tin pans, or semicircle pouch pans, sprinkle with banana slices and a little sugar and bake for 25-20 minutes or until the toothpick comes out with a few moist crumbs from the center of the muffin.
