This is a family of the "Assaf" winery. His father, Assaf, has been making wine since 1998, and ten years ago they established the family wine village in Kidmat Tzvi in the Golan Heights. So good people - there are. Good wine - check. Food - check. Come on, all that's left is to do cheers!

Red trout in white wine
Ingredients:
√ 1 large trout fillet (salmon is also possible)
For pressing:
√ 1/2 cup coarse salt
√ 1/2 cup light demerara sugar
√ grated peel from 1 lemon
√ grated peel from 1 orange
Smoking:
√ 1 tablespoon fennel seeds
√ 1 tablespoon of Janson seeds
√ 1 thinly sliced orange
√ 6 sage leaves
√ 3 rosemary branches
√ 1 tsp. ground chili
√ 1 teaspoon ground black pepper
Sauce:
√ 1 2/1 cups fresh orange juice
√ 1/2 glass of white wine, dry Sauvignon Blanc, mineral and rich in flavors is recommended
√ grated peel from 1 orange
√ 1 tablespoon crushed coriander seeds
√ black pepper, salt

Pressing phase:
1. Coat all trout with salt, sugar and grated orange and lemon peels, wrap in plastic wrap and place in the refrigerator for a whole day.
2. The next day, wash and clean the fish and dry thoroughly. Place overnight in the refrigerator, uncovered, until dry.
Smoking phase:
1. Mix all the smoking spices and coat the fish in the mixture. Place the fish in the smoker or oven for 20 minutes on low heat. If in the oven - add a pan with water to moisturize the fish, which dries easily.
2. Cook all the sauce ingredients until about 1/2 of the liquid is reduced (if the meal is dairy, add 50 grams of butter).
3. When the fish is ready, pour the sauce over it and serve.
