The restaurant guide "Michelin Guide" has again awarded the Tölz restaurant "Schwingshackl Esskultur" with one star.

Bad Tölz

– The restaurant guide “Guide Michelin” announced its ranking for 2023 on Tuesday evening.

One of the coveted stars remains in the district.

Erich Schwingshackl, who has been running the “Schwingshackl Esskultur” restaurant in the old ferry house with his wife Katharina since 2018, can once again keep his award.

This makes the native South Tyrolean the only star chef in the district of Bad Tölz-Wolfratshausen.

"I always say: There are over 20 mayors in the district, but only one starred restaurant," says Schwingshackl, laughing, in a telephone conversation with our newspaper."

"Schwingshackl Esskultur" in Bad Tölz will keep its Michelin star in 2023

In 2019, the 53-year-old received a Michelin star for the first time with his restaurant on the Isarlust in Bad Tölz.

Since then he has maintained the level and the special award.

"You can't slack off a day," he emphasizes.

After all, the testers of the renowned restaurant and hotel guide come without prior notice and remain anonymous.

"You have to work consistently with your team every day and only use the highest quality products." Schwingshackl knows what he's talking about.

After all, he convinced the Michelin testers before opening his restaurant in Tölz in the "Villa am See" in Tegernsee and in his former restaurant in the Bavarian Forest.

Also this year the joy is great.

"We hoped that we could keep the star, but despite all our efforts you can never be sure.

Only last year his wife Katharina Schwingshackl was awarded Sommelier of the Year (we reported).

In other words, she is considered one of the best wine connoisseurs in the republic.

This is of course not a bad combination.

"It's a validation of our work."

Celebration at Schwingshackl: toast the Michelin star with champagne

On Tuesday, the Schwingshackls found out about the success via the live broadcast from Karlsruhe.

"We poured champagne with the team," says the star chef before he says goodbye to the kitchen.

From there, things continue seamlessly – with passion and the utmost precision.

After all, you never know when the testers for the 2024 star rating will be at your door.
