Although we know the Ferrero Rocher who managed to get the status of a luxury snack, but in fact it is a fairly simple candy to make and very, very addictive.
The word Roches means stones in French, and similar to the word from which it came, the Roche mimics the look and texture of stones thanks to the combination of the nuts that are broken in the mouth.
A few years ago on one of my visits to Paris, I decided to get some local chic and got into Fuchs.
I admit that fluffy eclairs with gelatin coating and pictures printed on the dough do not entice me, not even croissants for tens of euros.
The only thing that left an impression on me in her designer deli, were the horseradish.
They were big, full and colorful, but not like the hacklers.
The shades of chocolate, earthy shades of brown and white, of nature and not of factory attracted me.
A bit like putting in front of the average person a beautiful dish from a Michelin-starred restaurant, in front of a steaming pot of mum.

Well, for mom's weight, I chose Brosha.

Ingredients
To the nut mixture
250 grams of almond chips
50 grams of halved hazelnuts or pistachios
50 grams of halved pecans
100 grams of powdered sugar
2 tablespoons brandy or any liqueur you like
For chocolate
150 grams of dark chocolate
150 grams of milk chocolate or white chocolate
35 grams of butter or cocoa butter

Preparation
How to make homemade Rocha balls?
1 Preheat oven to 180 degrees.
2 In a bowl, mix all the nuts together with the liqueur, add the powdered sugar and mix so that you evenly coat all the nuts.
3 Sprinkle the coated nuts on a baking sheet lined with baking paper and bake in the hot oven for about 5-10 minutes.
Remove and cool completely.
4 Meanwhile, melt the dark chocolate with 20 grams of cocoa butter in a bain marie or in a microwave for 30 seconds.
In a separate bowl, melt the white chocolate or milk chocolate with 15 grams of cocoa butter in a banana or microwave for 20 seconds.
5 Prepare a tray with baking paper, put on disposable gloves, take a small handful of nuts and dip in the chocolate.
Place on the baking paper and transfer to the refrigerator until hardened (this can also be done with two teaspoons).

If you work with two or three types of chocolate, it is recommended to start with white chocolate and continue with milk and bitters.
