This pie is a precise combination of pretzel, salted caramel cream and a generous layer of chocolate - a trio that together create a salty-sweet, delightful and especially pampering bite.



This is a cake I make all year round because it is really great and addictive.

Luckily for me, I discovered that I can also enjoy it on Passover thanks to the use of a kosher pretzel for the holiday.

Pretzel pie with chocolate and salted caramel

Ingredients

  • For pretzel:

    • 200 grams kosher pretzel for Passover (or regular pretzel not on holiday)

    • 140 grams of melted butter

    • 3 tablespoons sugar (3 tablespoons)

  • For salted caramel:

    • 1 cup sugar (200 g)

    • ¾ Sweet cream (185 ml)

    • 60 grams of butter, cut into cubes

    • ½ teaspoon of salt

  • For chocolate ganache:

    • 250 ml for 38% sweet cream

    • 260 grams of coarsely chopped dark chocolate

How to make a pretzel pie with chocolate and salted caramel?

  • 1 Preheat oven to 180 degrees.

  • 2

    Prepare the tartlet:

    Place the pretzel in a food processor and grind until very thin crumbs are obtained (you do not need to really reach the grinding level of powder).

  • 3 Mix the sugar, pretzel and butter and firmly fasten the mixture to the bottom and sides of a crumbling pie pan.

    Bake the pancake for 10 minutes and cool.

    Prepare salted caramel:

    Heat the sweet cream in a small pot and bring it to the boil.



    At the same time, place the sugar in a medium saucepan, heat and melt.

    Once some of the sugar at the edges of the pot has melted, cover it with unmelted sugar.

    When all the sugar has melted mix gently until an amber-colored syrup is obtained.

    While stirring quickly, add a little of the hot cream (carefully, the caramel is boiling).

    Continue to mix and gradually add the rest of the cream.

  • 5 Cook the cream with the sugar for a few more minutes until dark caramel is obtained.

    Remove from the heat.

    Add the salt and mix.

    While stirring, gradually add the butter.

  • 6 Pour the caramel into the pancake and cool until the caramel settles slightly (you can transfer to the refrigerator).

    Prepare the ganache:

    Melt the chocolate and cream in a Ben Marie or in the microwave and mix well until a smooth cream is obtained.

    Gently pour over the caramel and refrigerate for two hours, or until the coating settles.

    How to make chocolate chips for decoration as in the picture?

    Melt some dark chocolate, flatten it on baking paper to a thin layer and roll the baking paper into a roll.

    Refrigerate until the chocolate is completely hardened.

    When the chocolate is hard, open the roll of baking paper and break the chocolate chips into smaller chips.
