There is nothing like filling jars with new and delicious cookies.
They directly add beauty, a sense of home and a desire to invite someone loved and dear to coffee.
This time they are rolled up of crispy dough in two different fillings - the first is a filling of ground pistachios with marzipan that is no less amazing, and the second, the more familiar and the one that is impossible without it, is a date filling with ground almonds.
Together they create a winning combination of flavors and colors for your cookie jar.

Ingredients
For the crunchy cookie dough:
3 cups flour
1 tablespoon baking powder
2 tablespoons of sugar
1 teaspoon vanilla extract (or almonds)
180 grams of butter at room temperature (or natura for vegans)
3 tablespoons canola oil
½ Cold milk (or water)
For the marzipan-pistachio filling:
200 g peeled, natural pistachios
100 grams of marzipan
2 tablespoons powdered sugar
4 spoons
For the date filling:
300 grams of date spread
50 grams of chopped almonds
1 teaspoon cinnamon

Preparation
How to make rolls with pistachio stuffing and date stuffing?
1 Put all the dough ingredients in a wide bowl or mixer with a guitar hook or food processor, until a slightly sticky dough is obtained.
Care should be taken not to knead too much so as not to lose the crispiness.
Set the dough aside to rest for 10 minutes.
Using a food processor, grind the ingredients of the pistachio-marzipan filling into pulses and transfer to a bowl.
In another bowl, mix the ingredients for the date filling.
3 Lightly flour the work surface and divide the dough into three parts (it is also possible to have four parts for smaller cookies).
Drizzle each part and roll into a sheet half a centimeter thick.
Spread a different filling on each dough sheet (I spread one with pistachios and two with dates) and leave a margin of about 2 cm without filling. Roll the dough sheet with the filling into a roll and place on a baking paper-lined pan.
Using a sharp knife, make incisions all the way down the rolls.
The size of the cuts will be the size of the cookies.
Bake in a preheated oven at 180 degrees for about 25 minutes until golden.
Cool and repeat the cuts.
7 You can dust the cookies with powdered sugar on top.
