Ingredients

How to make chicken soup from Keaton Restaurant?

  • 1 Divide the chicken and rinse the pieces in boiling water.

    Put in a pot with water and bring to a boil.

  • 2 Dash the foam and then add the carrots, onions, parsley root and celery.

    Season with salt and black pepper and cook over medium heat for about an hour under partial cover.

    Wrap in cling film and refrigerate for at least an hour.

  • 7 Meanwhile, prepare the filling: Fry the onions in the schmaltz until browned.

    Chop the cooked chicken (if there is also the meat) and mix together with the fried onions.

    Season with salt and pepper.

  • 8 Roll the chilled dough into a thin sheet (the dough is puffed when cooked in water), make circles, fill with the meat filling and close tightly all around.

    Cook in boiling salted water until the dumplings begin to float and one more minute.


    Tip: For those who do not eat the carp in the soup but as a dish on its own, it is recommended to fry the onions in goose fat and sprinkle over them.
