In fact, 100 grams, equal to two slices, contain 319 calories, about the same as a hectogram of mortadella (307) and less than the same amount of salami (352). And not only that, these are interesting foods for their contribution in high biological quality proteins, vitamins B1 and B2 (thiamin and riboflavin) and iron and zinc (trace elements for which deficiencies can occur in the case of a vegetarian diet). Furthermore, as regards the problem of the quality of lipids, which has long unfairly penalized these foods, the current data indicated by Coldiretti indicate that the composition in fatty acids and the relationship between the different classes of these substances do not differ from those which are the nutritional recommendations.



Obviously, attention to the quantities on the plate, Coldiretti still points out, remembering that about 90% of the national production is consumed during the holiday period at the end of the year.

A largely certified heritage, such as Cotechino and Zampone di Modena Igp protected by a precise production disciplinary, in a market where artisanal sausages are becoming increasingly popular.
