, put the crumbled yeast with the sugar in the lukewarm milk to dissolve.

Then put this mixture in a bowl along with butter, flour, egg and salt.

  • Knead everything for 2 minutes by hand or on a low speed in the food processor.

Then knead the dough for about another 15 minutes at a higher level or by hand.

  • Put the dough in a floured bowl, cover with cling film and let the dough rise in a warm place for about an hour.

  • Then turn the yeast dough out onto a lightly floured work surface and dust it with a little flour.

    roll out the dough about

    .

Brush it with 60 g softened butter and sprinkle with the vanilla sugar.

  • Now cut the dough lengthwise into

    finger-width strips

and turn them in opposite directions from both ends and shape them into a snail.

  • Place the snails a little apart on a baking sheet lined with baking paper (or read these more environmentally friendly alternatives to baking paper) and brush them with water.

Place a tea towel over the snails and let them rest for another hour or so.

  • Preheat the oven to 180 °C top/bottom heat.

Then whisk the egg with 1 tablespoon of water and brush the snails with it.

  • Bake the butter custard rolls in the oven for about 15-20 minutes.

Don't let them get too brown, every oven is different.

Admittedly, a bit more complicated, but the taste will reward you for the effort!

If you like, you can cover the snails with icing after they have cooled.
