At "Roma Baccalà" history, market and new frontiers in the kitchen

 ROME - From the protection of the seas to the protection of fish biodiversity to the new frontiers in the kitchen up to the communities that preserve the gastronomic tradition.

There are many themes to explore at the third edition of "Roma Baccalà" which will be held from 8 to 11 September in collaboration with the VIII Municipality of Rome.



An appointment that, in the characteristic spaces of Garbatella, attracted thousands of fans in previous editions and this year "returns to the square with a new party in the name of openness and inclusion" announce the organizers Antonella Bussotti and Luca Broncolo of A / Lab.



The theme of inclusiveness and sustainability will be at the center of the cultural program of the event as explained by the Artistic Director of Rome Baccalà, Francesca Rocchi: "The world of cod is much more than a story linked to a product but rather a metaphorical place that has intertwined fundamental historical events and which has left an indelible trace in our gastronomic and religious cultural matrix. The strength of our event is probably the vision in bringing cultural themes linked to the awareness of what we are through food, and at the same time entering the square with exciting and iconic dishes ".



Over 20 cultural meetings, more than 20 traditional cod dishes, 30 cooking workshops and 14 hosts: these are some of the numbers of the 2022 edition of Rome Baccalà which will host the diplomatic representations of the Kingdom of Norway and Portugal.

Very Important Baccalá, the guide 'Baccalà, the iconic places of Rome where you can taste and buy cod and stockfish' will be presented, a novelty published by Pecora Nera Editore and created in collaboration with Roma Baccalà.

Among the novelties, the focus dedicated to the food and wine culture of Calabria: "Our region has historically had a profound link with the stockfish culture in Italy, being able to boast the roots of this incredible product introduced by the Normans already around the year 1000. For this reason the Calabria is one of the stockfish capitals in the world - says the Councilor for Agriculture of the Calabria Region, Gianluca Gallo - and for this reason we will bring our stories, our dishes, our culture intertwined with biodiversity, but also our folk music ,



This year, for the first time, the Ministry of Agriculture Fisheries Department will be present in Rome Baccalà in the Spazio Educa dedicated to raising awareness of the care of the sea and oceans, with educational workshops for children and adults entrusted to the educators of Slow Food Rome.



Always about education and information to the consumer but above all about food safety, we will talk during the in-depth analysis of the Car, the Rome Agri-food Center which hosts the largest fish market in Italy.

"For a product as important to our diet as the fish one, food safety is a particularly important critical factor", comments Fabio Massimo Pallottini, Director General of the CAR, "Initiatives like this one in Garbatella allow the Romans to know directly actors in the supply chain and in particular the fundamental role of wholesale markets, a place where supply and demand meet, through the stories and stories of the many operators as well as the high quality of the products offered ".



Six hosts from Rome offer the many Roman specialties based on cod: chef Tommaso Pennestri from Trattoria Pennestri, chefs Nicolò and Manuel Treccastelli from Trattoria Trecca, chef Matteo Ballarini from Il Velodromo Vecchio in Rome, Tiziana Favi from Namo Ristobottega and Giulia Gherardi of Terre and Domus.



Unmissable themed dishes of the Festival of Badiola Perugia, the Festival of Borgoricco Padua, the Festival of Mammola Reggio Calabria and Catanzaro.

To taste the cod fritters, the iconic Baccalà alla vicentina, the Stocco alla Mammolese and the ancient Morzello di cod.
