In a study, Spanish researchers are investigating the health effects of various cooking methods such as roasting, braising or roasting.
Frankfurt/Madrid – Frying, roasting, cooking, stewing - food can be prepared in many different ways.
But can the type of preparation also have an impact on our health?
Researchers from the Faculty of Medicine at the Autonomous University of Madrid asked themselves this question and carried out a study in collaboration with the Center for Epidemiology and Public Health in Madrid.
The scientists aimed to find evidence for the role of cooking methods in inflammation and metabolic health.
For this purpose, associations of cooking methods with inflammatory markers, kidney function and other hormones in older adults were evaluated.
Studying cooking methods could provide interesting insights into the development of chronic diseases, experts say, as many of these are linked to changes in inflammatory markers.

Study of different cooking methods and their health effects
In their study, which was published in the journal
Nature
, the researchers conducted a cross-sectional analysis of 2,467 people over the age of 65.
Nutritional and cooking information was collected based on a personal nutritional history.
Eight cooking methods were examined in more detail:
raw food
Cook
roast meat
Frying in the pan
frying
Roast
sauté
braising
The experts were able to determine healthy profiles in relation to inflammatory markers, kidney function and thyroid hormones for raw food and the preparation methods of boiling, roasting and roasting.
In contrast, frying and braising showed unhealthier profiles.
Cooking methods with added fats that are heated at high temperatures or for long periods of time were rated as unhealthy in the study.
However, the researchers point out that the effect of a particular cooking method cannot be distinguished from the effect of added fats when they occur together.
Study: Deep-frying food is harmful to health
Raw, cooked and pan-fried foods all have beneficial effects on kidney function, the study found.
According to the experts, certain cooking methods, such as deep-frying food, are harmful to health.
"Frying produces polycyclic aromatic hydrocarbons and heterocyclic amines, which are genotoxic substances and have been linked to cancer," the study states.

Similar studies have already been carried out in the USA.
For example, analyzes from the Nurses' Health Study and the Health Professionals Follow-Up Study showed an association between the consumption of fried foods and higher incidences of diabetes, cardiovascular disease and heart failure.
