Yosef's schedule, 33 years old and mother of two daughters - after all this leaves her only Sundays, which are dedicated to slowing down (but also to training), closing logistical corners and drinking accelerated coffee ("outside, relax a bit in the sun").



Meanwhile, she plans what's next - the next branch in Israel, the trip abroad, the course that will teach her something new. I raise an eyebrow in bewilderment, trying to think of what else there is to learn with such dough, and she explains that "even if my croissant seems perfect to you, I know there's always a little something to improve, in everything."



I wasn't convinced, but I did. My job is not to be easily convinced, and her job is to ignore, to dream and make it come true - and also to tattoo on her body as a reminder of her Michelin dream. "I have a lot of plans in mind , and I know how to plan for the long term," she lit up her eyes, "so in the meantime I started taking care of myself, nurturing myself, investing in myself, and at the same time I'm looking at what's next, checking my gut feelings and waiting for a sign."
