You've probably heard the saying "Friday is fish day", right?

This tradition actually goes back to one of the most important Christian holidays, Good Friday.

This is considered the high point of Lent and by not eating meat, many Christians commemorate the suffering of Jesus when he was crucified.


Regardless of whether you are a believer or not, we use the occasion for a delicious fish dish from northern Germany: Hamburg panfish with fried potatoes and mustard sauce.

That's how it's done:

You need these ingredients:

  • Fish:

  • 600g

    Fish fillet (e.g. cod, pollock, redfish)

  • 60 grams of flour

  • 1 tsp salt

  • 1 tbsp clarified butter

  • Fried potatoes:

  • 800 grams of potatoes

  • 150 grams of onions

  • 2 tbsp clarified butter

  • Mustard sauce:

  • 2 tbsp butter

  • 2 tbsp wheat flour 

  • 300ml milk

  • 200 ml vegetable broth

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tbsp lemon juice

  • 1 pinch of sugar

  • 1 tbsp mustard

  • 1 tablespoon grain mustard

  • Aside from that:

  • dill, to taste

  • Pickles, to taste

And this is how easy it is to prepare:

  • For the fish:

    wash the fish fillets, pat dry and cut into pieces.

    Season flour on a plate with salt and pepper.

    Turn the fish fillets in it from all sides.

    Knock off excess flour.

  • For the fried potatoes:

    Wash the potatoes, boil them in their skins for approx. 20 minutes, peel them, let them cool down and cut them into slices.

    Halve, peel and slice the onions.

  • For the mustard sauce:

    Melt the butter in a saucepan.

    Add flour and fry briefly.

    Deglaze with vegetable broth and milk while stirring.

    Season with salt, pepper, lemon juice and two types of mustard, bring to the boil and set aside.

  • Heat 2 tbsp butter in a pan.

    Fry the potatoes and onions in it over medium heat until the potato slices are well browned.

  • Heat 1 tablespoon of clarified butter in another pan.

    Fry the fish fillets on both sides until golden brown and remove.

  • Serve pan-fried fish with hash browns and mustard sauce, and garnish with dill and pickles, if desired.
