The "Vegranny" from North Hesse shows that you don't have to do without good home cooking.
Most of us probably grew up with the hearty home cooking of our parents or grandparents.
These included roasts of all kinds, stews with minced meat, bacon or sausage, roulades with dumplings and, and, and ... Anyone who then decided in the course of their life not to eat meat or fish or any animal products was – especially earlier – often left to their own devices.

In recent years, however, the attitude towards vegetarian or vegan nutrition has changed fundamentally.
Various substitute products for schnitzel and Co. are offered in the supermarkets (even if there is often a dispute about their name) and there always seem to be new ideas when it comes to milk alternatives.
Plans are currently underway to bring potato milk to the German market.
And when it comes to home cooking, you don't have to do without anything here: The "Vegranny", grandmother of the Schmidt family from northern Hesse, still cooks hearty meals for her loved ones, but these days they are usually vegan.

"Vegranny": A grandma as a social media star
@vegranny has now been an integral part of the
community for over two years (with almost 13,000 followers) and has also been on
TikTok
since last year .
Her recipes are popular and she has many fans.
So much so that she has even written and published her own cookbook with her family.
But her recipes can also

@vegranny's recipe for her vegan version of Jägerschnitzel
The schnitzel is often associated with Germany abroad and it was also one of the top 3 favorite dishes for many people when they were children.
The version with mushrooms in a cream sauce is called Jägerschnitzel and @vegranny shows how she prepares her vegan version.

For the schnitzel you need:
15 soy medallions
1.5 liters of water
3 tbsp vegetable broth
Chop and schnitzel spice mix
herbal mix
1 packet of egg substitute (for 3 eggs)
200 ml sparkling water
oil for frying
Breadcrumbs for breading

The preparation is then very simple: Bring the water with the vegetable broth to a boil.
Add soy chunks and cook over medium-high heat for 10 to 15 minutes (stir occasionally).
Then strain and express something if necessary.
Then season the soy schnitzel on both sides with the cutlet schnitzel seasoning and the herb mixture.
Mix the egg substitute with seltzer.
First dip the soy medallions in egg substitute, coat with breadcrumbs and then fry in a pan.

As a rule, a typical Jägerschnitzel consists of veal or pork and is served with a mushroom sauce.
This can be chanterelles, but also mushrooms (see photo).

For the mushroom cream sauce you will need:
250 g chanterelles (frozen or fresh)
2 small onions (red)
100 ml cream (vegan)
Herb mix, salt, pepper
oil for frying
Preparation:
Peel the onions, cut into cubes and fry in the oil until translucent.
Add the chanterelles (patted off) and fry until the liquid is gone.
Then season to taste, fry briefly and finally deglaze with the cream.
