"Minister Lollobrigida is right, the poor eat better than the rich because they know how to recognize good and genuine things": to tell ANSA is the master of Italian cuisine, Gianfranco Vissani, who has always been a great lover of traditional local dishes. He says this after the words of the head of Agriculture for the Government. "A poor dish can become a great dish if cooked well and people who traditionally do not frequent Capri, Porto Cervo or Saint Tropez know how to eat well for relatively little money," adds the chef.
"The rich go to the big starred restaurants often without even knowing what they eat, they go there because it is trendy", underlines Vissani. "The average Italian family - he adds -, the one linked to its roots and that has to deal with it to make ends meet, is traditionally educated to the recognition of raw materials. This allows him to buy products of excellent quality and therefore to eat well and healthily. My menus have always been focused on local products, obviously cooked with that extra 'quid' that the chef puts into it, but I have always drawn on the poorest products of our Italian cuisine. I believe that we should increasingly return to the rediscovery of old flavors, those that cost little and have a great taste, which are then those that are prepared every day by Italian families who cannot afford to spend dizzying amounts in restaurants ".
