Here's a simple yet delicious recipe that whipps up an autumnal pumpkin bread, or pumpkin mares, that's great as toast with plum jam or as an accompaniment to savory dishes.

For a juicy pumpkin mare, you only need a few ingredients:

  • Pumpkin mare:
  • 500 g wheat flour
  • 1 packet of dry yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 300 g pumpkin puree (from boiled and mashed pumpkin)
  • 50 ml neutral vegetable oil (e.g. rapeseed oil)
  • 150 ml lukewarm water

This is how easy it is to prepare a quick pumpkin bread at home:

  • In a large bowl, combine the flour with the dry yeast, salt and sugar.
  • Add pumpkin puree, vegetable oil and lukewarm water. Use the dough hooks of the hand mixer to knead everything into a smooth dough for five minutes. Cover the dough and let it rest for about 60 minutes until it has doubled in volume.
  • Knead the yeast dough on a lightly floured work surface and carefully shape into a rectangle. Roll up the rectangle from the longer side and place in a greased loaf pan.
  • Cover the dough again and let it rise for another 30 minutes.
  • Preheat the oven to 180 °C top/bottom heat. Brush the pumpkin mare with a little water and bake in the oven for 30 minutes.
  • Allow to cool completely, carefully remove from the mold and cut into slices.
