Even if Alfons Schuhbeck won't be cooking much in the near future, his recipe for the quick and universal mustard sauce always works.

Celebrity chef Alfons Schuhbeck is now behind bars. The reason for this, however, is something other than his cooking skills. Although he will hardly be able to pursue his profession in the next few months, he could use the time to come up with new recipes. For example, his recipe for the perfect roast pork or the mustard sauce presented here, which goes well with much more than eggs.

If you don't have mustard on hand, you can make it yourself. Has the mustard been in the fridge for a long time and liquid has formed? No problem either.

Recipe for the quick, universal mustard sauce by Alfons Schuhbeck

In addition to the ingredients, you will also need a saucepan and a whisk. The quantities given here result in about 200 milliliters of mustard sauce in the end. If you want more, simply double or triple the information.

Ingredients:

  • 100 ml broth, e.g. vegetable broth
  • 100 ml cream
  • 1 tbsp mustard (spicy)
  • 1 tbsp mustard (sweet)
  • 10 g butter (cold)
  • Salt (to taste)
  • Chili powder (e.g. mild, to taste)

Tip: If you don't like chili powder or don't have it on hand, you can also add other spices. Classic pepper would fit just as well as orange or lime pepper or similar mixtures. Just give it a try.

Preparation of the quick, universal mustard sauce by Alfons Schuhbeck

The preparation of the celebrity chef's simple mustard sauce is wonderfully uncomplicated and can be done in just a few steps.

Preparation:

  • Bring the broth for the mustard sauce to the boil.
  • Add the cream and bring to a boil again.
  • Stir in both mustards.
  • Add cold butter.
  • Season with spices to taste.
  • It's no longer quite classic, and it's not part of the Schuhbeck recipe: If you like, you can add herbs to the mustard sauce at the same time as the butter. Frozen or fresh doesn't matter. Thyme, parsley and chives, for example, go wonderfully with the Schuhbeck mustard sauce – but you can confidently trust your own preferences.

    What goes well with Alfons Schuhbeck's mustard sauce?

    Of course, you can serve this mustard sauce with eggs. But it also tastes excellent with chicken breast, chops or roast beef. And salmon or other types of fish are also wonderfully complemented by the rather light sauce. If you don't eat meat or fish, you should try them with broccoli or broccoli, green beans, zucchini, kohlrabi or cauliflower.
