- With over 700 thousand tons produced, bread is among the most wasted foods in Italy. This was announced by Too Good To Go, a social impact company and marketplace for food surpluses on the occasion of World Bread Day on October 16 and based on the latest report released by the Waste Watcher International Observatory on Food and Sustainability which places it in second place of the most wasted foods. It is estimated that on average an Italian wastes 1 kilo of bread per year.

The reason for the waste - explains Too Good To Go - "due to a wrong conservation of this food that, although frequently consumed in Italian kitchens, can end up drying out in a short time". Based on data from the National Association of Bakers in Italy - reports the marketplace - there are 250 different types of bread and on the Italian territory there are about 24,000 bakeries, for an annual production of over 700 thousand tons.


Bakeries and bread and bakery shops represent about 10% of the active partners on the Too Good To Go platform. The marketplace also offers anti-waste recipes and tips to better preserve bread (whether fresh, in boxes or homemade), including, for example, using paper or linen bags, which being breathable materials, circulate the air, preventing the bread from drying out ahead of time.

Among other suggestions is to freeze it or wrap the loaves with beeswax sheets, "the ecological wrappers of this material, it is explained-, also exploit other ingredients such as organic cotton, jojoba oil and resin for food preservation, keeping the bread soft for several days".
