If there was only a little something from the bakery at lunchtime, many people would like a warm meal after work. If you're in a hurry, broccoli noodles are ideal.

Exhausted from the day, you don't want to study complicated recipes and go shopping and then have to stand in the kitchen for a long time. Instead, most people have a simple and quick dish in mind that still contains some nutrients and really fills you up. With a one-pot dish, you also save yourself the trouble of monitoring several hotplates and also need to plan less time for the subsequent rinsing.

Broccoli as a healthy filler

Broccoli, as the digital health magazine of the AOK also writes, is one of the vegetables particularly rich in vitamins and minerals. Calcium, potassium, iron and magnesium can be supplied to the body by the green vegetable, as well as vitamins A, B, C, E and K.

Broccoli is particularly low in calories. That's why it's a perfect ingredient in light dishes. Thanks to its high fiber content, however, the green vegetable keeps you full longer than comparable portions of other low-calorie vegetables, such as cucumbers, tomatoes and zucchini.

Ingredients for the one-pot dish with broccoli

For about four servings

  • 400 g noodles (dried, of your choice)
  • 2 heads of broccoli
  • 1 onion
  • 3 cloves of garlic
  • 50 g mild grated cheese (e.g. mozzarella or Gouda)
  • 350 ml cream

This is how easy it is to prepare the creamy broccoli pasta

  • First, thoroughly wash the broccoli cut into bite-sized florets. Then cook the florets in a larger pot with enough salted water for about seven minutes. Fish the finished broccoli out of the pot and set aside for the time being.
  • In the reheated broccoli water, the noodles are now cooked according to the package instructions. Meanwhile, peel and chop the garlic cloves and onion. The broccoli can also be cut into smaller florets, depending on your taste. Then drain the cooked noodles.
  • In an empty saucepan, sauté the onion and garlic in a little olive oil until translucent. Now add the broccoli and let everything roast nicely. Season the vegetables with the chili flakes and, if desired, other suitable herbs. Deglaze with the cream and stir in the grated cheese to form a creamy sauce.
  • Finally, return your cooked noodles to the pot. Now mix everything together, season with salt and pepper and serve. Enjoy your meal!
  • If you've already had your fill of quick pasta dishes, you don't have to give up broccoli. This can not only be cooked or steamed as a simple vegetable side dish, but can also be processed into a creamy soup or vegetarian broccoli pancakes.
