Zucchini is harvested in Germany from June to October. Take advantage of the season and make a delicious casserole topped with Parmesan.
Take advantage of the remaining season to prepare exceptional delicacies from zucchini. How about, for example, a moist zucchini cake or a fresh salad with zucchini? If you prefer a hearty main course instead, try stuffed zucchini with minced meat and tomato sauce, zucchini parmigiana or the following recipe for the Mediterranean zucchini casserole with mushrooms, minced meat and feta.

- 1 onion
- 1 clove garlic
- 2 zucchini
- 2 tbsp olive oil
- 125 g mushrooms
- 500 g minced meat
- 2 tbsp tomato paste
- 1 pinch of oregano
- 1 pinch of basil
- 1 pinch of salt
- 1 pinch of pepper
- 100 ml water
- 1/2 cube vegetable broth
- 250 g feta cheese
- 200 g Parmesan cheese
You'll also need a little olive oil and a pastry brush to coat the dish.
