Take advantage of the remaining season to prepare exceptional delicacies from zucchini. How about, for example, a moist zucchini cake or a fresh salad with zucchini? If you prefer a hearty main course instead, try stuffed zucchini with minced meat and tomato sauce, zucchini parmigiana or the following recipe for the Mediterranean zucchini casserole with mushrooms, minced meat and feta.

Recipe: You need the following ingredients for the Mediterranean zucchini casserole

  • 1 onion
  • 1 clove garlic
  • 2 zucchini
  • 2 tbsp olive oil
  • 125 g mushrooms
  • 500 g minced meat
  • 2 tbsp tomato paste
  • 1 pinch of oregano
  • 1 pinch of basil
  • 1 pinch of salt
  • 1 pinch of pepper
  • 100 ml water
  • 1/2 cube vegetable broth
  • 250 g feta cheese
  • 200 g Parmesan cheese

You'll also need a little olive oil and a pastry brush to coat the dish.

Preparation: This is how easy and quick to make the Mediterranean-style zucchini casserole

  • Preheat the oven to 150 degrees Celsius top/bottom heat (fan 130 degrees Celsius) and brush a baking dish with a little olive oil. Peel both the onion and garlic clove and chop them into small pieces. Before cutting the zucchini into thin slices, you should wash them. Then lay out some zucchini slices in the baking dish.
  • Put the olive oil in a saucepan, sauté the onion and garlic and then the mushrooms, then add the minced meat and sauté it. Add the tomato paste and season with oregano, basil, salt and pepper as needed. Mix the water with the vegetable broth and deglaze the minced meat with it. Let the mixture simmer for another ten minutes and season again if necessary.
  • Spread the minced meat mixture over the zucchini slices in the baking dish. Cut the feta cheese into small cubes, which you also spread evenly in the pan. Place the remaining zucchini slices on top and sprinkle the Parmesan cheese on top. Place the baking dish in the preheated oven for at least twenty minutes.
