Recipe: You need the following ingredients for the banana bread that children love

  • 250 g gluten-free or plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 2 flaxseed eggs or other egg substitute* or 2 eggs
  • 225 g coconut blossom sugar or other sugar
  • 110 g coconut oil or 120 ml pecan oil
  • 1/2 vanilla bean or 1 tsp vanilla extract
  • 120 g soy yoghurt or plain plain yoghurt
  • 2 medium ripe bananas, mashed
  • 120 g natural pecan kernels, cut into pieces
  • More pecan pieces for garnish

Preparation: This is how easy and quick it is to make the perfect banana bread by Eva Klaus

  • Preheat the oven to 175 degrees Celsius top/bottom heat (fan 155 degrees Celsius). Grease a loaf pan (approx. 23 x 13 cm) and set aside.
  • Mix flour with baking powder, baking soda, and sea salt in a medium bowl until well combined.
  • Place the eggs or egg substitute in a mixing bowl with sugar and coconut oil and stir for about two minutes on medium heat.
  • Scrape out the vanilla pod and add vanilla seeds to the mixture. Add the yoghurt and mashed bananas and mix for another two minutes on medium speed.
  • First, add half of the dry ingredients and stir in for 30 seconds, then mix in the rest for about 30 seconds.
  • Then fold the pecan pieces evenly into the batter. The dough should be nice and thick.
  • Pour the dough into the loaf pan and smooth it out with a dough spatula. Spread some pecan pieces on top.
  • Bake the banana bread on the top rack for 60 minutes until hardly anything sticks to the wooden stick (cooking test!). The wooden stick should not be completely clean.
  • Remove from the oven and allow to cool in the pan for ten minutes. Place the bread on a wire rack to cool.
  • Allow to cool completely and cut to taste. Enjoy your meal!
