Zucchini can be used to conjure up a wide variety of dishes. Recipe: You need the following ingredients for stuffed zucchini with minced meat

  • 4 zucchini
  • 2 onions
  • 150 g Gouda or Edam cheese
  • 3 tbsp sunflower oil
  • 500 g minced meat
  • 2 tbsp tomato pulp
  • 3 tsp vegetable broth powder
  • 1/2 tsp nutmeg powder
  • 1/2 tsp coriander powder
  • 1/2 tsp paprika powder
  • 1 pinch of salt
  • 1 pinch of pepper
  • 2 tbsp cream cheese
  • 600 mg tomato puree
  • 1/2 tbsp oregano
  • 2 tbsp apple juice

Preparation: This is how easy it is to make zucchini stuffed with minced meat

  • Wash and cut the zucchini in half. Cut off the ends and spoon out the flesh. Cut the flesh of the zucchini into fine cubes. Peel the onions and cut them into fine cubes, just like the cheese.
  • Put the sunflower oil in a saucepan and fry the minced meat and half of the diced onions. Also add the zucchini cubes and tomato paste. This is followed by a teaspoon of vegetable broth, nutmeg, coriander and paprika. Season with salt and pepper to taste. Finally, stir in half of the cheese cubes and the cream cheese and pour the mixture into the hollowed-out zucchini. You will need the leftover filling later.
  • Place the stuffed zucchini in a baking dish, sprinkle the remaining cheese cubes on top and bake the dish in a preheated oven at 180 degrees Celsius top/bottom heat (fan 160 degrees Celsius) for just under half an hour.
  • In the meantime, you can prepare the tomato sauce. To do this, fry the second half of the diced onions in a little oil and add the leftover zucchini filling. Add the tomato puree and let the tomato sauce simmer. Add the rest of the vegetable broth powder, oregano and apple juice, and season with salt and pepper to taste.
  • If you like, you can serve the stuffed zucchini with tomato sauce with a portion of rice.
