Curious or even macabre names sometimes hide very tasty dishes. Cholera, for example, is a vegetable cake with leeks, potatoes and cheese. Legend has it that the Swiss speciality from Valais got its name from the disease of the same name. Cholera recipe: You need the following ingredients for the Swiss leek and potato cake

  • 300 g flour
  • 1 tsp salt
  • 130 g butter
  • 225 ml water
  • 400 g leeks
  • 300 g jacket potatoes (waxy)
  • 2 apples
  • 1 pinch of nutmeg
  • 1 go. tsp salt
  • 1 pinch of salt
  • 2 tbsp ground peeled almonds
  • 300 g Valais mountain cheese
  • 1 egg

You'll also need some butter or margarine to grease it and a little flour to dust the springform pan.

Step-by-step instructions: this is how easy it is to prepare cholera cake

  • Put the flour, salt and 120 g butter in a large baking bowl and mix the ingredients. Add 125 ml of water while stirring. Place the dough in the fridge for about half an hour.
  • Wash the leeks, cut them in half lengthwise and then cut them into strips about one centimeter thick. Heat the remaining butter in a frying pan, add the leeks to the pan and add the remaining water. Simmer the contents of the covered pan over medium heat for about ten minutes. Then remove the lid and let it simmer until the water has completely evaporated.
  • In the meantime, peel the jacket potatoes and cut them into fine slices. The apples should be washed, quartered, cored and also sliced. Mix both with the leek and season with nutmeg, salt and pepper.
  • Preheat the oven to 200 degrees Celsius top/bottom heat (fan 180 degrees Celsius) and roll out about two-thirds of the chilled dough into a greased springform pan dusted with flour. Be sure to press down on an edge about four centimeters high and prick the ground several times with a fork. Roll out the remaining dough into a dough lid about three millimeters thick.
  • Spread the almonds first, then half of the vegetables and half of the grated cheese on the dough base. This is followed by the rest of the vegetables and cheese. Finally, place the dough lid on the cake and press it lightly on the edges. Whisk the egg and brush the dough with it. Bake the cholera cake for about three quarters of an hour in a preheated oven on the lowest shelf. Allow to cool slightly before eating.
