The GDR was known for many things – and still is today. Also in the kitchen there are some remnants in the form of dishes and their recipes that still have numerous lovers. These include, for example, the hearty steak-au-four or the Mecklenburg milk potatoes grandma's style.
Of course, there was not only hearty food in the GDR. That's why the simple seltzer cake without weighing, the clic cake without baking or the moss cake (seen in the Netflix series Kleo) were also very popular.
The Honecker cake belongs to this group and owes its name to the three layers of light (almost yellow), red and dark (almost black). Erich Honecker himself was probably the most important politician of the German Democratic Republic (GDR) – from 1971 to 1989.

Ingredients for the historic Honecker cake
For the GDR recipe of the Honecker cake you will need:
- 12 tbsp flour (approx. 120 g)
- 12 tbsp milk (approx. 180 g)
- 12 tbsp sugar (approx. 180 g)
- 3 eggs
- 550 g butter
- 1 packet baking powder
- 2 packets vanilla sugar
- 3 tbsp baking cocoa (approx. 24 g)
- 2 bags of red fruit jelly (to cook yourself)
The red fruit jelly is prepared according to the package instructions, so the ingredients for it are added. As a rule, this is two to four tablespoons of sugar and half a liter of water.

Preparation of the Honecker cake with three layers
Basically, a sponge is made for the Honecker cake, which can be baked on a baking sheet as well as in a springform pan. Here's how it works:
If you want to give the whole thing a little more pep, you can add vanilla flavor or lemon zest (alternatively: lemon flavor) to the light dough. The fruity one goes wonderfully with the red fruit jelly.
Not in the mood for a trip down memory lane? But then maybe a seasonal sheet cake, for example with plums and sprinkles. The firefighter's cake and the turn-around-cheesecake are also popular with young and old.
