Cake recipe: You need the following ingredients for the creamy-fruity raspberry sour cream cake

For the cake batter:

  • 125 g sugar
  • 1 packet of vanilla sugar
  • 125 g butter
  • 1 egg
  • 250 g flour
  • 1 packet of baking powder

For the filling:

  • 150 g powdered sugar
  • 2 packets of vanilla pudding powder
  • 500 g milk
  • 600 g sour cream
  • 1 tsp lemon juice

  • 500 g frozen raspberries
  • 1 packet of red cake glaze
  • 100 ml raspberry juice
  • 150 ml water
  • 2 tbsp sugar

You'll also need a springform pan.

Preparation: This is how easy and quick it is to bake the creamy-fruity raspberry sour cream cake

  • Add both the sugar and vanilla sugar as well as the butter to a large baking bowl and mix the ingredients until creamy. While stirring, add the egg. This is followed by the flour and baking powder. Knead the ingredients into an even shortcrust pastry, which you press into a springform pan. Also form a rim about two to three centimeters high and place the baking pan in the refrigerator.
  • In the meantime, mix the powdered sugar with the vanilla pudding powder and milk. Bring the pudding to a boil, stirring constantly. Then remove it from the heat and let it cool. Stir again and again to prevent skin from forming.
  • Preheat the oven to 200 degrees Celsius top/bottom heat (fan 180 degrees Celsius).
  • Stir the sour cream and lemon juice into the pudding, remove the springform pan from the fridge and spread the cream filling over the cake batter. Place the frozen raspberries evenly on top of the cream and bake the raspberry sour cream cake in a preheated oven for about 50 minutes.
  • In the meantime, prepare the cake glaze as described on the package with the raspberry juice, water and sugar and spread it over the warm cake.
