TURIN - Once again this year, Turin will become the Italian capital of the Christmas dessert par excellence for a weekend. On 25 and 26 November, 'Una Mole di Panettoni' returns to the Hotel Principi di Piemonte, the event organized by Details Eventi that brings together the best leavening makers of Italian pastry chosen from those who comply with strict quality rules, i.e. the use of sourdough and the exclusion of any type of chemical additive. A market, that of large leavened Christmas products, which in Italy is worth 707 million in turnover, of which 100 million in the artisan sector.
There are 35 artisans in competition and three categories: best traditional Milanese school panettone (high without icing), best traditional Piedmontese school panettone (low with icing) and best creative panettone. The desserts will be evaluated on the basis of criteria such as the right weight, general appearance, shape, aroma, color, alveolation, palatability, acidity, aftertaste, cooking, glaze for the Piedmontese and filling for the creative one. During the event there will be a 'solidarity bar' thanks to Luca Argentero and Beniamino Savio's non-profit organization, '1 Caffè', and 5 guided tastings per day are scheduled.
