Ingredients for the autumnal yeast pastry

The cinnamon autumn classic is prepared in three simple steps

  • First, heat 60 grams of the softened butter with the milk in a small saucepan. Meanwhile, mix the flour with 50 grams of sugar, the vanilla sugar and a pinch of salt in a large mixing bowl. Crumble the fresh yeast into the dry ingredients and add your lukewarm, melted butter. The dough is now stirred with dough hooks for about five minutes until smooth. Then cover it and let it rest for 45 minutes. In the meantime, you can already grease the baking pan thoroughly with softened butter.
  • After resting extensively, the dough can now be rolled out into a rectangle (about 40 x 30 cm) on the well-floured work surface. Then the cinnamon filling is prepared. To do this, whip the remaining 100 grams of soft butter. Add the remaining sugar and cinnamon to the butter. Brush the dough with the cinnamon butter, leaving a border of about one centimeter. Gently roll up the rectangle from the long side.
  • Cut down about ten slices of the same thickness or cut the roll for an extra clean result, alternatively with a piece of dental floss. Place the slices in your greased pan and let everything rest covered again for half an hour. At the end of the resting period, preheat your oven to 180 degrees top and bottom heat or to 160 degrees circulating air. The snails are then baked in the oven for 25 minutes. Enjoy your meal!
  • If you want the snails to be a little juicier, you can mix a full-bodied cream cheese glaze in just a few minutes. To do this, beat about 70 grams of cream cheese with a tablespoon of softened butter and a heaping tablespoon of powdered sugar, then brush the lukewarm cinnamon rolls.
