This is how easy it is to bake a festive speculoos apple pie

  • While the oven preheats to 180 degrees top and bottom heat, the biscuit base can first be prepared. Melt the butter in a small saucepan. In the meantime, process the speculoos biscuits into fine crumbs with the help of an appropriate kitchen utensil or simply in a freezer bag and with a rolling pin. Mix the speculoos flour with the melted butter and press down in the buttered springform pan to form a base. Use your fingers to form an edge for the cake. Then cover the cookie base and place it in the fridge.
  • In the next step, the apples are briefly washed, peeled, sliced and drizzled with the lemon juice of a squeezed lemon.
  • Beat sugar, vanilla sugar, and eggs with a pinch of salt in a large mixing bowl until fluffy. Add flour, baking powder and cinnamon and stir to a smooth dough. Then fold in two-thirds of the apple slices. Remove the base from the fridge and cover with the dough. Finally, spread the remaining apples and flaked almonds on top.
  • Bake the cake in a preheated oven for about 35 minutes until golden. Perform a rod test. Then allow to cool slightly and garnish with powdered sugar. Enjoy your meal!
  • Still warm from the oven and served with a scoop of vanilla ice cream, the Christmas speculoos apple pie tastes particularly delicious.
