Ingredients for Smashed Potatoes with Sour Cream Dip

For about two servings of smashed potatoes, you'll need:

  • 750 g small to medium potatoes (mainly waxy)
  • 2 tbsp melted butter
  • 1 tbsp olive oil
  • Salt and black pepper
  • Some parsley (finely chopped)
  • Choice of 1 clove of garlic and some coarse sea salt

  • 2 tbsp fresh herbs (e.g. parsley, chives, oregano)

That's how quickly you baked the "mashed" potatoes in the oven

  • While the oven preheats to 180 degrees hot air (alternatively 200 top and bottom heat), wash the potatoes thoroughly and cook them with the skin in a large pot of boiling salted water for about 25 minutes. Drain and drain slightly.
  • Line the baking sheet with parchment paper and drizzle with a little olive oil. Now spread the cooked potatoes on the tray with some distance between each other and press down with a potato masher (alternatively with a drinking glass or pot bottom). It is important to make sure that the potatoes do not fall apart. Pour a little olive oil over the flat potatoes and season with salt and pepper.
  • Bake in a preheated oven for about 15 to 20 minutes until golden. Meanwhile, melt the butter in a small saucepan. Finely chop the parsley and some garlic and mix with the melted butter.
  • After the baking time, remove the potatoes from the oven and brush with the flavored butter. Then put the potatoes back in the oven and bake for a maximum of ten more minutes until crispy.
  • Meanwhile, mix the sour cream with lemon juice and the fresh herbs and season with salt and pepper. Serve the potatoes still warm from the oven with the dip and optionally some coarse sea salt and fresh parsley. Enjoy your meal!
  • If you like, you can grate some spicy Parmesan cheese on the still oven-warm potatoes instead of a pinch of coarse sea salt after baking. This melts slightly on the potatoes and gives the whole thing a pleasant cheese note.
