That's how quickly you baked the "mashed" potatoes in the oven
If you like, you can grate some spicy Parmesan cheese on the still oven-warm potatoes instead of a pinch of coarse sea salt after baking. This melts slightly on the potatoes and gives the whole thing a pleasant cheese note.
