January 12 is Curry Chicken Day and what better way to celebrate it than with a classic chicken curry?

Curry Chicken Day is a day of action that takes place annually on January 12 and is celebrated with many different activities, especially in the United States. Restaurants offer special curry chicken menus, grocery stores sell curry chicken ingredients, and cooking shows share recipes for this popular dish with diverse variations – from mild to spicy, sweet to sour. Curry combines an abundance of spices, the mix of which varies depending on the region and recipe. Some of the most common ingredients include turmeric, chili, ginger, cilantro, and cumin. It's easy to prepare, thanks to these step-by-step instructions:

  • Season the chicken breast cubes with curry powder and set aside.
  • Heat cooking oil in a frying pan. Sauté the onions and garlic until translucent. Add the marinated chicken.
  • Add the tomato paste, ginger, carrot, bell pepper and leek to the pan and stir well.
  • Deglaze with coconut milk and simmer for about 20 minutes until the chicken is cooked and the vegetables have reached the desired firmness.
  • Meanwhile, rinse the basmati rice in a colander under running water until the water runs clear. Bring water to the boil in a saucepan and simmer the rice over low heat for about 15 minutes. Remove the pot from the heat and cover the rice and let it sit for another ten minutes. Then fluff with a fork and serve with the chicken curry. Season with salt and pepper and garnish with fresh coriander. Enjoy your meal!
