Thanks to their Christmas marzipan aroma, Sicilian almond biscuits are a wonderful way to get in the mood for the coming Advent season.
The Italian "Pasta di mandorle" translates into English as "almond paste", but in the vernacular it means a traditional Sicilian pastry. The main ingredient, namely finely ground almonds, or almond flour, is probably quite self-explanatory. With the homemade almond biscuits, marzipan lovers and fans of Italian cuisine in particular can be made very happy with just a few simple steps.

Gingerbread, speculoos and co. – bake your own Christmas delicacies
In addition to cakes and sweet pastries for afternoon tea or coffee, cookies and gingerbread are now particularly popular again. And although the supermarket assortment already adapts to the upcoming Advent season in autumn, the delicacies from the local Christmas bakery usually taste even better.
Those who have already eaten their fill of the classic butter biscuits, vanilla crescents and cinnamon stars in recent years can try their hand at more modern biscuits this year, such as the foolproof Nutella biscuits. In addition to cinnamon and orange zest, marzipan is probably one of the most popular baking flavors during the Christmas season.
Ingredients for the easy almond biscuits from Italy
For about 25 to 30 small almond biscuits:
- 250 g ground almonds
- 2 egg whites (M-eggs)
- 150 g sugar
- 70 g powdered sugar
- 3 pinches of salt
- 1 tbsp honey (alternatively agave syrup)
- 2 drops of bitter almond flavour
- Optionally some orange zest (an organic orange)

Even though the Italian almond cookies are not a seasonal tradition, they are somewhat reminiscent of Christmas cookies due to their marzipan flavor. If you want the taste of the delicacies to be a little more festive, it is recommended to refine the cookies with a little orange zest and a pinch of cinnamon.
