Chocolate powders may be good for making cold chocolate, when the sugar and other ingredients don't dissolve easily in the milk, but when you get to the real pleasure - and when you want to control the sweetness and lower all their sugar - there's nothing like hot chocolate made from high-quality cocoa powder, a little vanilla extract and a pinch of salt that stirs up all the chocolate flavors (and anyone who has ever eaten chocolate plus sea salt knows what I'm talking about).

Ingredients for 4 servings:

  • 1 cup boiling water
  • 3 cups milk/vegetable milk of your choice
  • 3 teaspoons high-quality real cocoa powder
  • 6 tsp. white sugar (or less if desired)
  • 1/2 tsp. vanilla extract
  • A pinch of salt - just a little bit at the tip of your fingers
  • Extra:1 tablespoon chocolate chips per cup
  • whipped cream

Instructions:

1. In a small saucepan or cauldron containing 4 cups of liquid, place all the dry ingredients. Pour over a cup of boiling water and start stirring on low heat until there are no cocoa lumps left and the sugar melts. If you have a whisk that you are comfortable working with, feel free to mix with it.

2. Add the vegetable milk/milk, vanilla extract and salt, and continue stirring until gently boiling. Be careful, milk does not react well to a real boil with huge bubbles, and it loses its flavor.

3. Once the drink starts to boil gently, turn off the fire and pour into glasses. Finish with whipped cream if desired and can also pour some chocolate chips that will melt at the bottom of the glass for a sweet surprise at the end.
