Crispy falafel tastes great on its own, as well as in a salad, wrap or flatbread. With a little more time and effort, you can also create a colorful "bowl" around the small chickpea balls.

If you don't trust the greasy meat skewer of the neighboring kebab shop, you may have already opted for a portion of crispy falafel balls in a flatbread, wrap or chip box. Combined with a light yoghurt sauce, fresh herbs and crunchy vegetables, the vegan chickpea balls should also be able to convince all meat lovers.

Although the small falafel balls are usually fried in plenty of oil, they are basically nutrient-rich sources of fiber and thus the healthier alternative to regular kebab meat. Thanks to the chickpeas, falafel contains plenty of protein, iron, magnesium and B vitamins. "There is also fiber in the small legumes. They are good for digestion, intestinal health and keep you full for a long time," explains Annabel Dierks, nutrition expert at the Consumer Advice Centre.

Ingredients for the crispy chickpea balls from the pan

For about two servings of falafel balls, you'll need:

  • 250 g dried chickpeas (not from a jar or can)
  • 1 onion
  • 1 to 2 cloves of garlic
  • 1/2 bunch coriander (alternatively parsley)
  • 2 tbsp lemon juice
  • 1 tsp cumin
  • Salt and pepper
  • Oil (for frying)

That's how fast you've pan-fried Turkish falafel

  • First, the dried chickpeas are soaked in plenty of water. If possible, this should be done the day before.
  • Wash the coriander thoroughly and then chop finely. Peel the garlic and onion and finely dice them as well.
  • Drain the chickpeas, place in a tall mixing bowl and puree with a hand blender. Now add the coriander, garlic and onion and puree everything until smooth. Season the falafel dough with cumin and lemon juice and season with salt and pepper.
  • Form Brussels sprouts into large balls and heat oil in a deep frying pan. Bake the falafel balls in hot oil until golden brown. Then drain on some paper towels and serve. Enjoy your meal!
  • The crispy falafel balls taste particularly good with some fresh yoghurt dip and a colourful salad. But fries or rice can also be wonderfully combined. Alternatively, you can create a homemade falafel sandwich in a piece of flatbread or a wrap.
