You only need a few ingredients for the delicious lemon tiramisu:
Mascarpone cream:
450g mascarpone
3 tablespoons lemon curd (this is how you can make lemon curd yourself)
1 tsp vanilla extract
400g whipped cream
Lemon drench:
50g sugar
1 lemon, peeled and juiced
120ml water

800 g ladyfingers
400g lemon curd

To prepare the refreshing lemon tiramisu, proceed as follows:
For the mascarpone cream:
In a large bowl, cream together the mascarpone, lemon curd and vanilla extract using a hand mixer or whisk until the mixture is smooth and uniform.
Beat the whipped cream until stiff and gently fold it into the mascarpone cream.
Stir gently until everything is well mixed together.
For the lemon soak:
Mix the sugar, the juice of one lemon, water and the zest of half a lemon in a saucepan and bring to the boil.
Once the lemon mixture is boiling, remove it from the heat and let it cool.
To remove any remaining lemon peel, pour the mixture through a sieve.
Halve the ladyfingers and dip them into the previously prepared lemon soak.
Then distribute the soaked sponge cake halves as the bottom layer in glasses or dessert bowls.
Pour the mascarpone cream over the biscuits, making sure they are generously covered.
Repeat the process until the cream is used up.
Finally, garnish the lemon tiramisu with a few spoonfuls of lemon curd and lemon slices to taste.
