The consumption of artisanal ice cream in Italy is worth 5 billion euros.
This is what Fipe-Confcommercio states on the occasion of the 45th edition of Sicep, the International Ice Cream, Pastry, Artisan Bakery and Coffee Exhibition taking place in Rimini from tomorrow to January 24th.
There are around 39 thousand businesses involved, including ice cream bars, ice cream parlors and 'pure' ice cream shops, employing over 90 thousand workers.
The sector - explains Fipe - is "in good health but, like other public establishments, it finds itself at the center of new development dynamics which push companies to make a continuous commitment to keeping the level of quality and innovation high product and service".
"Sigep - explains the president of Fipe Lino Stoppani - is a fundamental event to capture the new trends of a sector, that of ice cream and pastry, which is not only an important component of food consumption outside the home, but is also an entrepreneurial asset of the country and symbol of Made in Italy throughout the world".
"Behind a simple but excellent ice cream - he underlines - there is a long production chain made up of machines, equipment, furnishings, raw materials, commercial establishments and, naturally, qualified workers".
"A supply chain - he concludes - that invests, exports, carries out research and innovation, creates wealth and employment. In short, a taste supply chain that is first and foremost an extraordinary asset of the Italian production system".
