If you fancy pasta with Bolognese sauce again, you can conjure up a delicious, meatless alternative in just 20 minutes.

More and more people seem to be joining the New Year's “Veganuary” trend with their resolutions.

We eat exclusively vegan throughout January and avoid all animal products.

Whether for health or environmental reasons or simply to challenge yourself, “Veganurary” is becoming increasingly popular.

If you don't want to spend a long time dealing with new and complex recipes, you can cook a delicious, purely plant-based Bolognese sauce in just 20 minutes.

From breakfast to dinner: vegan is so easy

For many people, the concept of eating a vegan diet seems a lot more complicated than it really is.

Because with the help of meat substitute products from the supermarket and lots of fresh fruit and vegetables, the menu quickly fills up.

Do something particularly good for your weakened immune system with a steaming bowl of vegan pumpkin cream soup with ginger and coconut milk.

You can cook the vegan lentil bolognese in just a little more time than the pasta itself.

And of course vegans shouldn't have to go without coffee and cake.

With a dash of plant milk in your filter coffee and a large piece of vegan marble cake, nothing stands in the way of the perfect coffee party.

Ingredients for a purely plant-based Bolognese sauce

For about two servings of vegan bolognese you will need:

  • 120g red lentils

  • 500 ml vegetable broth

  • 200g chopped tomatoes

  • 1 stick of celery

  • 1 large carrot

  • 3 shallots

  • 2 cloves of garlic

  • 3 tbsp tomato paste

  • 1 tbsp olive oil

  • Dried herbs (e.g. oregano, basil, paprika powder) 

  • salt and pepper

You can cook the vegan bolognese in just 20 minutes

  • First peel and finely dice the shallots, garlic and carrot.

    Wash the celery stalks thoroughly and dice them into similarly sized pieces.

  • Heat some olive oil in a large pan and briefly sauté the shallots and garlic.

    Then add the carrot, celery, lentils and tomato paste to the pan.

    Fry everything for a few minutes.

    Then deglaze with vegetable broth and chopped tomatoes.

  • Simmer the vegan bolognese for about ten minutes until the lentils are cooked.

    Then season with the dried spices and salt and pepper.

    Garnish with a little fresh parsley or vegan grated cheese.
