That's how it's done:
For the juicy meatloaf you need these ingredients:
Meatloaf:
1 tbsp cooking oil
100g onions, diced
2 rolls
50 ml milk
800g mixed minced meat
2 eggs
2 tbsp salsa
20 g parsley, chopped
100 g gherkins, diced
1.5 tsp salt
1 tsp pepper
1 teaspoon sweet paprika powder
2 tbsp cooking oil
Sauce:
100 g crème fraîche
200 ml salsa
2 tbsp tomato paste
1 tsp pepper
100 ml vegetable broth
Toppings:
parsley, chopped
The preparation is really easy:
For the meatloaf:
Heat 1 tablespoon of cooking oil in a pan and fry the onion cubes in it.
Remove and let cool.
Cut the rolls into cubes and let them soak in milk.
Express well.
Knead the minced meat, soaked rolls, eggs, salsa, parsley, pickles, salt, pepper, paprika powder and fried onions well with your hands.
Shape into an oval loaf and place in a greased baking dish.
Brush the meatloaf with a little cooking oil to create a nice brown crust when baking.
Bake in an oven preheated to 180 °C for 30 minutes.
For the sauce:
In the meantime, mix the crème fraîche, salsa, tomato paste, pepper and vegetable stock and pour over the meatloaf.
Bake for another 20 minutes.
Sprinkle with chopped parsley if desired and serve with rice.
Enjoy your meal!
