No kitchen scales, no problem.

This quick pancake recipe uses just one cup and five simple ingredients.

Recipes from the cup are popular.

A few years ago, the mug cake, also known as microwave cake, came to Germany from the USA and found numerous fans in this country.

Only a small amount of ingredients are mixed together in a cup and then baked in the microwave - the result is a cake for one person.

A cup can not only serve as a baking pan, but also as a practical measuring instrument.

Find the right cup for measuring

In earlier times, kitchen scales were considered a luxury item that every household could not possibly afford.

That's why people used to use cups or other containers to measure ingredients.

Older recipes bear witness to this.

In English-speaking countries, the cup is still the unit of measurement of choice today.

However, the English “cup” refers to a cup with a capacity of 240 milliliters, while in this country a cup means a smaller vessel of around 200 milliliters.

You should be aware of this and convert the information from British or American recipes accordingly.

Once you have found the right cup for measuring, the pancakes are quickly on the plate.

Before you start cooking or baking, you first have to find the right cup.

If you are not entirely sure whether the cup actually holds 200 milliliters, the best way to find out is to use a measuring cup or a scale.

Either fill a measuring cup up to the 200 milliliter mark and pour the liquid into the cup.

Or you can place the cup on a kitchen scale, turn it on and then fill the vessel to the top with water.

Ideally, the scale should show around 200 grams.

That's almost exactly 200 milliliters.

Pancakes from the cup with only five ingredients

Once you have found a suitable cup, weighing it is easy.

Even larger quantities can be prepared quickly by doubling or tripling.

This one-cup pancake recipe serves three people and only requires a few ingredients:

  • 1.5 cups flour

  • 2 cups milk

  • 1 pinch of salt

  • 2 eggs

  • Butter or oil for the pan

Cup recipe: How to prepare the pancakes

When measuring with a cup, you should always start with the dry ingredients - in the case of pancakes, the flour.

Then you can move on to the liquid ingredients.

This means no residue remains stuck inside the cup.

  • Mix the flour, milk and salt into a mixture and let the dough rise for a quarter of an hour.

During this resting time, the starch absorbs liquid and the dough becomes even and smooth.

  • Add the two eggs one after the other.

  • Heat oil or butter in a non-stick pan.

Fry the pancakes over medium heat.

Stir the dough again before each new pancake so that no liquid separates.

  • With this basic recipe, the pancakes can be served either sweet or savory.

If you like the pancakes particularly fluffy or crispy, you can change the dough a little:

    • Fluffy pancakes:

Either separate the eggs, beat the egg whites until foamy and carefully fold them into the batter.

Or stir in a splash of mineral water.

    • Thick pancakes

(American pancakes): Stir in baking soda or baking powder before baking.

    • Crispy pancakes:

Replace half of the milk with water.

This makes the dough thinner and crispier.
