If you like lemon cake, you can simply bake a sheet cake.

Both lemon juice and lemon zest can be used with organic fruits.

Whether children or adults: Many people consider lemon cake to be their favorite cake.

As a sheet cake, you can bake a juicy lemon cake yourself quickly and easily.

Here is a recipe idea that you should try out right away for your next invitation to coffee and cake.

Not only the self-squeezed juice from untreated lemons is used in baking, but also the lemon zest.

However, make sure that you only use organic lemon zest.

You need the following ingredients for this sheet cake:

  • 250g sugar

  • 300g butter

  • 1 heaped teaspoon of baking powder

  • 300g flour

  • 250g powdered sugar

  • 5 eggs

  • 2 untreated lemons

Bake your own juicy lemon cake from the tray

  • First, use the mixer to beat the butter and sugar in a bowl to create a fluffy, foamy texture, then stir in the eggs.

Additional ingredients are added in the next steps.

  • You should now wash the untreated lemons thoroughly with hot water.

Then grate the zest of one lemon and squeeze both lemons.

Tip: To get as much lemon juice as possible, roll it out tightly over the worktop beforehand.

  • Add the lemon zest and some of the lemon juice (about 3 tablespoons) as well as the flour and baking powder to the mixture (made from butter, sugar and eggs) and mix everything in the bowl to form a smooth dough.

  • You can now spread the whole thing evenly on a baking tray lined with baking paper and bake the cake in the oven at 160 degrees top and bottom heat for about 25 minutes.

  • While you let the cake cool, you can now work on the icing for the lemon cake: Mix the powdered sugar with some of the lemon juice and a small amount of water to make a thick icing.

  • You can now simply spread the icing over the cooled cake.

  • Simply cut the cake into pieces and serve with a slice of lemon on top.
